"This is kale? But I hate kale! And I love this!" Salad:

Susan made this salad for my wedding reception, and people went wild over it. I made it for a party at work a few months later, which is how the salad got it's name... it's surprisingly good! - Sarah (a 5th generation Comstock)

Mix together:
1 clove minced garlic
1/2 tsp dried basil
1/4 tsp ground pepper
1 tsp dried mustard or dijon mustard
2 Tbsp Basalmic vinegar
1/4 cup cider vinegar
3 Tbsp maple syrup
1 Tbsp lemon juice
2/3--3/4 cup olive oil
salt to taste

Pour over kale & let sit for 6 hours or more.

I use very little salt and usually let the kale sit at least overnight. I also don't worry too much if I don't have a particular kind of vinegar or lemon juice, I tend to just make sure that I have the right amount of sour. If you like your dressing less oily you can also cut down on the amount of oil (not so many calories). This amount of dressing does a large batch of kale so you might want to halve the recipe or only use some of it if you are only doing a small amount of kale. Enjoy!! - Susan
